Three Christmas Miracles:
Miracle #1: I baked a triple batch of pumpkin bread or… 4 loaves, 12 muffins and a 9″x9″ cake. The last time I baked was probably 6 years ago… I made pumpkin bread then, too. The spice bottles I used said “best if used by 2001” – the stores were closed for Christmas Eve, so I had no other choice.
Miracle #2: My chosen mom, on the way to Kansas City, accidentally left her purse at one of the rest areas. Over an hour later when she went back to this same rest stop – her purse was still there.
Miracle #3: I cooked. That in itself would qualify, but I cooked a bird… in the oven, and everything. Keep in mind that I live on microwave popcorn, and microwave pizza, and cereal, so this was a really big deal for me. I have cooked a turkey before – probably 12 or 13 years ago. I made mashed potatoes and stove top stuffing and undercooked a Mrs. Smith’s pie, but it was all good.
There you have it – my Christmas Miracles – not suitable for a made-for-tv Christmas special – but that pretty much sums it up. Christmas was relaxing and enjoyable. I hope whatever time you may have spent with family and friends was equally enjoyable.
