I saw an article today, in the on-line version of my local paper, on the skyrocketing cost of food. The writer suggested that folks are either going to have to spend much more at the grocery, or find creative ways of cooking.
A friend gave me this idea – and she is a medical professional who probably told me the calories (very low), and nutritional value (high) of this spicy, hearty soup. She suggested I go to Aldi’s and pick up a can of tomatoes and peppers ($0.49), a can of mixed veggies – drained ($0.39) and a can of kidney beans – drained ($0.39), and pour into a pot and heat. For $1.27 you have anywhere from 3 – 6 servings (depending on how big of an eater a person is). You can put in other veggies instead of the mixed ones, or add some meat to this if you want – chicken or sausage – obviously one is better for most than the other and will increase the cost. You could also add a cup or two of cooked rice as filler, this shouldn’t add much to the cost. This is one tasty and inexpensive meal!
