I put in a full day at work.
Did a load of laundry.
Mowed and mulched leaves in half of the back yard.
I purchased the cheese cloth that has been on my “to buy” list for five months.
I collected red tomatoes off a plant that is still growing and producing flowers here in St. Louis.
I collected all the remaining basil and made a large amount of pesto. Half of the pesto I froze before adding the cheese (I was told cheese didn’t freeze well in pesto) and half I put into the fridge for consumption with the tomatoes.
I peeled and cut up five pounds of beets for the beet wine I plan on putting together later today after purchasing the lemon and orange called for in the recipe.
I prepared a batch of hummus (2 cans chick peas + part of the liquid, 1/3 cup tahini, 1/4 cup lemon juice, 3 cloves garlic, olive oil, salt) and divided it into two containers – one with hot peppers added.
I put two cups of soy beans in a bowl with water to soak overnight so I can make soy milk today.
So… what’s the miracle? Well, those who know me, know that cooking is something that has never interested me. The fact that I did all of this, truly is a miracle for me. Let’s hope today I can finish much of what I started.
